Chicken-Chile Enchilada Pie
"This is o.k. but obviously not authentic. I love Old El Paso products but I make my own enchilada sauce and pico de gallo. Authentic enchilada sauce uses no tomato products. It is red because of chile powder. It is hard to find an authentic recipe for red enchilada sauce but it is easy to make. "

Enchiladas Verde
"This recipe is wonderfully authentic from the corn tortillas to the queso fresca. All enchiladas should be made with corn tortilla and the queso fresca is a delightful cheese. I put it cold on top of the hot enchiladas and it has such a refreshing, good flavor. This is a five star dish."

"I agree that using sugar in a diabetic recipe is not often accepted. What the author of this recipe could have done and what I do all the time is sub sugar free maple syrup and sugar sub for brown sugar. This recipe, if done correctly should not be dry. If you are concerned that it might be add a little applesauce (sub it for some of the water) or small chopped apple bits or even maraschino cherries or raisins. These will keep the brownies or cake moist and fresh for a few days if your dish lasts that long. LOL"

Speedy Layered Chicken Enchilada Pie
"I use everything here except beans and the enchilada sauce. I make my own enchilada sauce. It is easy to make and very different from canned. Otherwise this is great with just a couple of my alterations. I realize everyone's taste is different and many people will like this as written. It is a very good recipe."

Bean and Chicken Tortilla Pie
"Clearly this is too soupy wet. This would be a lot better if the taco sauce was left out and served on top after the pie is cooked. The inclusion of one chopped tomato should be enough moisture for the filling. I really liked the idea of using the tortillas as a pie crust. It looks nice and delicious. Also, there is no reason you can't use whole tortillas; they do bend. "

Charlene's Christmas Cream Cheese Spread
"This is o.k. but if you add a little horseradish or wasabi it will add another dimension to this spread. You can even get thin sliced deli ham and, spread the spread on the ham and roll up the ham. Then cut the rolled up ham in bite sizes for appetizers. Secure with a toothpick. Don't forget to test for other seasonings such as salt and pepper and maybe some thyme or tarragon. "

Christmas Tree Appetizers
"This is fine but dry roast or fry your tortillas on a high heat otherwise your appetizers will have a raw flour flavor which is awful. They may look cooked from the package but they are still very raw. It only takes 2 minutes per tortilla or pita bread but they will taste and look much better and still be pliable. All tortillas or raw flat breads need to be cooked or heated before consuming to get rid of this raw flavor. Corn tortillas need to be fried in oil or margarine or steamed for use in enchiladas. Steam corn tortillas 10 seconds each so if you have 6 tortillas steam them in the microwave covered for one minute. Just put them on a microwavable plate or tortilla warmer cover with a paper towel or clean flour sack dish towel and microwave them. They provide their own moisture for steam."

Holiday Appetizer Wreath
"This is a perfectly fragrant and beautiful wreath! I use mayonaisse instead of cream cheese. It is easier to spread and add a little needed creamy moisture to this recipe. It is great to crush some rosemary with the mortar and pestle to add to the filling. Crushing the leaves brings out the fragrance and flavor. Almost any veggie can be used for this as long as you omit fresh tomatoes which will make the wreath soggy (or use sun dried tomatoes). I drain and pat dry my veggies after cooking to remove some of the moisture then chop and add seasonings such as the rosemary, smoke salt, and white pepper. You can always use your favorite."

Gorgonzola and Caramelized Onion Appetizer
"I simply don't know how to make this a better recipe. It is great! I carmelize onion without sugar because we are diabetic although it is a small amount of sugar. I can't say enough about Gorgonzola. It is a beautiful, flavorful cheese. Regular Bleu cheese will not do."

Easy Fiesta Christmas Tree
"This is great and if you have a Christmas mold mix some horseradish or wasabi into the cream cheese. This will add a new flavor dimension. If you have two round molds one smaller than the other (or three of gradient sizes) you can make a snow man. Use capers or chopped olives for the smile, buttons and eyes, a piece of sliced carrot for the nose and red bell pepper for a scarf. You can use bell pepper or eggplant skin for a nice purple top hat. This is a great recipe to have fun with. Apricot prserves are great and lingonberry too."

Cheesy Beer Fondue
"This is a great recipe! Add some bacon and Worcestershire sauce and pour over toast and you have Welsh Rarebit or Welsh Rabbit as some call it. Also, add some very sharp cheddar for a more authentic flavor. Otherwise, delicious as is!"

"You know what would really be good? Packaged stuffing instead of bread crumbs. The seasonings would help this dish alot. I love the use of sherry and making your own Alfredo sauce is really easy and you can use various kinds of cheeses."
