Asian Chicken with Kumquat Sauce
"I did not make the sauce to go with this recipe, but used the ingredients for the basting of the chicken. I liked that the soy sauce mixture made the chicken brown up nicely and the outside was crispy. The taste was good, for an asian inspired meal. Not my favorite flavor for baked chicken, but an easy go-to recipe for ingredients I know I have on hand."

Favorite Potato Salad
"I had never made potato salad either. I left out the vinegar and added green onions. It seemed like it wasn't "wet" enough though and so I kept adding and adding mayonnaise. I think if I made it again, I would cut the potatoes before cooking, as mentioned and also add milk instead of more mayonnaise. But the flavor is awesome!!"

Frozen Cranberry Margaritas
"In answer to the question about length of freezing, I had mine in the freezer for 24 hours exactly and the outside layer of the drink was frozen solid, whereas the inside was still liquid. I was able to take a metal spoon and sturdy metal whisk to brake it all up to make the "slushy" drink. I'm not sure if left longer if the entire drink would freeze but if so, it would probably have a longer "shelf life" in the freezer. I used a cranberry / raspberry cocktail mix and it was very good. I don't like my drink very strong and this was just right for me. You may adjust the alcohol accordingly."

Chicken à la King
"I love chicken a la king and it is an old family favorite. My mom and I used to make it with onions in the butter and lots of mushrooms. Also, a really great idea for flavor and a lower carb alternative is serving it over cooked lentils. I had never had lentils before mom served it over them and was skeptical but they are like a bean with an awesome light peppery taste. They really add a lot to the flavor of this recipe and are no harder to prepare than pasta, and easier than baking biscuits. A-class recipe."

Chili Ranch Grilled Pork (Cooking for 2)
"I have fixed this a lot at home and for company and it is a big hit. Very juicy and wonderful flavor. I alway throw it in a skillet with olive oil instead of grill it which keeps a lot of the seasoning with the chops. You even have leftover drippings to add the the plated chops. I omit the thyme and garlic and add a little cumin to give it a little more mexican flavor. FAB!"

Nacho Pinwheels
"I did like this recipe and it was fun to make "homemade" pinwheels: rolling them out with bisquick on my cutting board. The reason I gave it a 3 instead of a higher mark is the next time I make this, I will add more chili power and maybe even cumin because I was expecting them to be a little more flavorful. They were good, especially with salsa, as suggested but needed a little extra oomph!"
