Potato and Double-Corn Chowder
"I reviewed this recipe several months ago, gave it high marks then. I froze about half that batch; broke it out the other night, and while it was thawing in the microwave, I realized that I had some smoked sausage in the fridge that I needed to use, so I rough-chopped it and added it to the soup. It was wonderful! The texture of the soup was not affected by freezing, and the flavors stayed fresh. (Of course, the sausage may have helped.)"

This is a delicious recipe! Very easy comfort food at its best. Only changes I made were to add a teaspoon of Worcestershire sauce and a small can of mushrooms, drained. Yummy!

Puffed-Pancake Brunch Casserole
Rating:
I fixed this dish for supper, and it turned out really well--it browned beautifully, and the aroma while it was baking was amazing. However, the next time I fix it--probably for a breakfast at church--I think I'll reduce the ham to 8 oz rather than a full pound. I thought the ham overwhelmed the taste of the bacon and cheeses. Also, for a supper sidh, I may add some chopped Vidalia sweet onion with the ham and bacon. Anyway, I really do recommend this recipe to anyone with hungry people to feed at brunch.

Creamy Tomato, Meatballs and Rice Bake

This is a super-easy and very flavorful casserole. After fixing this one time, the recipe is going into my permanent file. In addition to being very tasty when first cooked, it also reheats really well in the microwave.

Apple and Sausage Oven Pancake

I thought that this dish was MUCH too sweet--I still like the general idea, but if I make it again will leave out the brown sugar, add some cinnamon and nutmeg to the apples, and possibly add some grated cheddar cheese with the cooked sausage. Actually, now that I read this, I think it's turning into an Impossible Pie instead!)
