"I have the big red Betty Crocker cookbook and my mom always made a "Spinach Crabmeat Quiche" version by substituting 1 cup (8 oz pkg) of imitation crabmeat for the bacon, adding 1/2 package of thawed frozen spinach (squeezing out all the water), and increasing salt to 1/2 teaspoon. She also used ready made pie crusts to save time and it was always served at Thanksgiving. Guests always enjoyed this dish! This dish also works well using fat free half and half."

"This is our favorite way to eat salmon! It''s very light, crispy and keeps the salmon moist inside. Be sure to watch the temperature on the stovetop though so it does not burn."
