"Excellent! I had to make it with frozen cooked shrimp and that made them a little tough. Next time I will use the fresh and I think they will soak up more flavor and be more juicy."

"I made this tonight for dinner and thought it was a fun vegetarian meal with a hearty Southwestern taste. I thought it was slightly dry and might add another chopped tomato or maybe a little more salsa next time. I think a can of corn would be a nice compliment as well."
