Great things can happen when you combine toast with delicious toppings, and I’m not just talking about butter and jam. Whether you’re planning a shower, movie night or a special family dinner, you’ll love how easy, affordable and delicious these small bites are.

Incorporating the best of late-summer produce along with some quick-fix summer classics (potato salad, anyone?), these apps are as versatile as they are addictive. (And a great way to use up leftovers too!) Let your imagination and taste buds lead the way.

  • Choose your toast wisely. Any of these toppings can be placed on top of toasted baguette, pita, naan, crostini or even flatbread crisps. (To make crostini, follow steps one and two from this recipe.) 
  • Time-saving tip: Crostini can be made up to a day in advance. Add toppings right before serving to avoid soggy bread. 
  • Make it stick: You want your toppings to stick to the bread, not fall on the floor. Spread on a layer of cream cheese, crème fraiche, ricotta or goat cheese – whaatever – before adding toppings.

1. Corn Salsa
Turns out, corn salsa is delicious on more than just tortilla chips! Mix in some feta or cojita cheese if you have it on hand!

2. Potato Salad, Bacon & Basil
Summer wouldn’t be complete without potato salad! Potato salad on crostini, along with a sprinkling of bacon and fresh basil, makes an addictive appetizer.

3. Suddenly Grain Salad & Zucchini
Add chopped zucchini and other summer veggies to a batch of Suddenly Grain Salad Southwest Grains, place on toast and voila! A fuss-free, fancy-feeling appetizer is served.

4. Egg Salad & Pickle
Another summertime favorite, egg salad, adds a hit of heartiness to any hors d'oeuvres plate. Top with a slice of pickle to cut the creaminess and add a little zing.

5. Plum, Pistachio & Honey
This stone-fruit and honey crostini tastes like dessert! Feel free to substitute any stone fruit—nectarines, apricots, peaches and cherries would work beautifully, as would any variety of nut.

A summertime classic benefits from the addition of basil, which adds an irresistible twist.
