Do you love yogurt as much as I do? I’m a huge yogurt fan, especially of Greek yogurt, I’ll even advocate eating it for dessert! Take this yogurt parfait I’m sharing with you today. It’s rich enough to satisfy my dessert cravings, yet light enough to not count as a major dessert splurge.

First, please know this recipe has plenty of room for creativity. Feel free to use your favorite yogurt flavor or try using plain yogurt with your favorite fruit or preserves swirled right into the yogurt. If you want to go a little more decadent, try using a Liberté Méditerranée yogurt. The first time I tried this yogurt I literally almost fell out of my seat, it's so creamy and rich. Or if you're feeling like you want something lighter and maybe need a boost of protein, go for the Liberté Greek Yogurt (each serving has 11 grams of protein).

The crumbled cookies add sweetness and texture to the parfaits, and if you let them rest in the refrigerator for a couple of hours, the cookies will soak into the yogurt creating a cake-like layer in the parfait almost like ladyfingers in tiramisu. If you want more sweetness, add another layer of cookie crumbles to your parfait

This light dessert is a quick fix to weeknight dessert cravings and also makes a fun presentation for guests and kids. Give it a try and let us know what you think!
