1) I like to make deviled eggs for parties, but sometimes the yolks are too soft or there is a green ring around the yolks. What am I doing wrong?
A: Here is our technique for hard-cooked eggs: Place eggs in a single layer in a saucepan and cover with cold water at least 1 inch above eggs. Cover pan; heat to boiling. Once boiling immediately remove from heat and let stand, covered, for 15 minutes for large eggs (12 minutes for medium and 18 minutes for extra-large), then drain. Immediately place eggs in cold water with ice cubes or run under cold water until completely cooled.
2) Is there a trick to getting hard-cooked eggs to peel evenly?
A: Very fresh eggs are sometimes more difficult to peel than eggs that have been refrigerated for a few days. To peel eggs, gently tap each egg on countertop until the entire shell is finely crackled. Roll gently between hands to loosen shell. Peeling under cold water sometime helps to loosen the shell.
3) Can you eat dyed Easter eggs?
A. Yes, following these guidelines:
- Only use eggs with shells that are not cracked (discard eggs that crack during or after coloring).
- Use coloring kits or food coloring.
- Refrigerate hard-cooked eggs in their cartons if you won’t be coloring them right after cooking and cooling. Refrigerate immediately after coloring and then again after displaying them. Eggs should not be at room temperature more 2 hours.
- Discard eggs that have been out of refrigeration more than 2 hours.
4) How long can I refrigerate hard-cooked eggs?
A. Hard-cooked eggs in the shell can be refrigerated up to 1 week. Peeled eggs need to be eaten the same day.
