Slow-Cooker Corn on the Cob with Flavored Butters

Remember last year, when I showed you how easy it is to make baked potatoes in the slow cooker? Corn on the cob can be cooked the same way! No fuss, no muss and you get to keep your kitchen nice and cool during these hot summer months. Once the corn is done, your slow cooker can do double-duty as a food warmer, keeping those juicy cobs ready for the takin' at your next summer gathering! 

To add an extra wow factor to your corn on the cob, why not whip up a flavored butter or two? They’re a cinch to make, and oh-so-very good. To make flavored butters, simply combine some softened butter and your choice of seasonings.

For Taco Butter, mix together 1 stick of softened butter and 1 tablespoon of Old El Paso Mild Taco Seasoning. So easy and so good.

For Bacon Ranch Butter, stir together 1 stick of softened butter and 1 tablespoon of dry ranch dressing mix and 1/4 cup of diced bacon or Bac-Os. The perfect spread for ranch lovers!

For Cilantro-Lime Butter, mix together 1 stick of softened butter and 2 tablespoons of fresh lime juice and 1/4 cup of chopped cilantro. Love the kick of lime combined with the sweet corn.

Now we’re ready to cook some corn! Put one piece of shucked, cleaned corn in the middle of a piece of aluminum foil. Place a tablespoon or two of butter, margarine or flavored butter on top of corn.

Wrap corn tightly in foil and place in your biggest slow cooker. (I use my six-quart slow cooker when I make corn.) Repeat the same steps with the rest of your corn.

Cover the slow cooker and cook on low for 4 to five hours or on high for 2 hours. Once corn is done, carefully unwrap and season to taste with salt or some of those delicious flavored butters.
