Chocolate and chipotle add a sweet, spicy flavor to chicken tostadas.
I love the combination of chocolate and chipotle but wondered how it would taste in a chicken dish. It ended up being really good! Instead of a classic mole sauce, I created a spiced rub that incorporates chocolate, chipotle, cinnamon and, for a little sweetness, brown sugar.
This is super easy, so it makes a great weeknight meal. See if your friends or family can guess the secret ingredient. I guarantee they will be surprised when you say chocolate!
I coated the chicken breasts with the rub and then shook off the excess. The outside darkens during grilling, but the inside stays moist.
Grill the chicken and then shred it. Chop a little endive and radicchio.
Mix with a light vinaigrette.
Place chicken on a tostada shell and top with the slaw mixture. Finish with a dollop of sour cream and shaved chocolate.
