Roasted Cauliflower Salad

When it comes to salads, I like to balance carb-heavy salads like pasta salad with vegetable salads so that we don’t have carb-overload. But sometimes you just want something that’s a little hearty than a green salad and a easier to transport too. 

This German Roasted Cauliflower Salad is a perfect potluck dish. It’s like German potato salad, but better. It’s a lovely mix of the lightly sweet roasted cauliflower, salty bacon and tangy dressing. It’s a nice accompaniment to bring to parties, as people always appreciate having a healthier option on the buffet.
