Black Bean Croquettes

Jump start your meatless Monday dinners with mouthwatering croquettes!

I love having meatless Mondays in our house. It’s not only a guaranteed healthy dinner once a week, but it’s also a very economical one. When I was really busy, store-bought vegetarian burgers would be our only meatless meal. But after a while, we got bored with those. So I started experimenting with different tasty vegetarian options.
 
These little black bean croquettes are much like black bean burgers but in a little ball shape. I like to serve them with fruit salsa or a green salad. Sweet potato fries are a delicious and nutritious option I like to serve to my family.

To make these croquettes, simply mash canned black beans, garlic, cumin and coriander. (I mash my beans with a potato masher until no more whole beans were visible.) Then add the remaining ingredients: corn, cilantro, onion and bread crumbs.

Form the mixture into little balls. Roll them in additional bread crumbs and bake. I serve the croquettes with a salsa made from fresh pineapple, tomato and cilantro.
