Sweet Potato Chips with Cranberry Aioli

Leftover sweet potatoes? Leftover cranberry sauce? Add these chips and dip to your day-after-Thanksgiving table!

It is the day after Thanksgiving...time to enjoy your next-day turkey sandwich. How about some chips and dip to add to your plate? Using leftover sweet potatoes and cranberry sauce from your Thursday feast, these are super easy to make!

Sweet Potato Chips

First, peel and rinse two large sweet potatoes. Cut the sweet potatoes in half and then thinly slice with either a sharp knife or a mandoline.

Toss with olive oil. Arrange in a single layer on a foil-lined baking pan or cookie sheet. Sprinkle with salt and pepper. 

Bake about 40 minutes at 350 degrees or until the chips are as crisp as you like.

Meanwhile, in a small bowl, mix jellied cranberry sauce (whatever kind your family likes best!), mayo, mustard and a little orange juice. Refrigerate until serving. 

When the chips are ready, scoop up some yummy dip and enjoy with your turkey sandwich!
