I don’t know about you, but for me, once winter rolls around and all that’s left in season are some not-so-pretty root vegetables and squash, I get a little bummed. Where are all the brightly colored fruits? The cucumbers? Tomatoes? Corn? It’s hard enough waiting until spring for my beloved produce to return, let alone finding enough squash recipes to curb my appetite all winter long. Luckily, I have these butternut squash fries to keep my tummy full and happy!

The recipe is delicious and easy! You’ll barely taste the difference between these and sweet potato fries. Plus, they’re packed with nutritious fiber. Here’s how to make them.

Peel, seed and slice your squash. Be sure to make the slices similar in size, so that they bake evenly. Place the fries on a lightly greased parchment paper-lined baking sheet.
