Buttered Brown Rice with Peas

With a little creativity, a touch of preparation and a dash of fun, not only can you add lots of healthy fiber to your daily routine, but also can enjoy every bite of it.

Take our buttered rice and peas, for example. It may sound simple, but oh my goodness does it taste great. You see, instead of boring old white rice, we use brown rice, which tastes so much nuttier, almost buttery and is packed with fiber. Then, we threw in some color (and more fiber) with the addition of sweet bell peppers and frozen green peas. (Did you know that one-cup of peas can have more than eight grams of fiber? Crazy, right?)

We use a whole cup of peas for this rice, scoring major points on the fiber tally, nutty brown rice, one bell pepper, green onion, butter and for a salty pop at the end, some parmesan cheese.

Cook up the rice then get your veggies cooked. Start with the bell peppers and cook until soft then throw in peas and green onion.

Once that is warmed through, stir in the cooked brown rice.

Then, add that salty pop of flavor with finely grated parmesan cheese. Stir everything together and you’re done!
