At-the-Cabin Mojitos—Summer in a Glass

A light, thirst-quenching summer beverage, this rum-based mojito starts with fresh mint and lime juice.

A Mojito is a popular Cuban drink, usually made with rum, mint leaves, fresh lime juice and a little sugar.  My version starts with a pile of fresh chopped mint leaves.

I’m not a big fan of having chopped or muddled leaves floating in my drinks. While fresh mint and other herbs provide a nice taste, they get stuck in my teeth. My solution is to cook the leaves in a simple syrup and to use the flavored syrup in drinks.

After the mint syrup has cooled, it’s easy to make the drinks, adding rum, lime juice and club soda to the syrup. Traditionally, mojitos are served in high-ball glasses. But I like to serve mine in low-ball glasses with lots of ice and lime slices.

Your drink is now ready to enjoy on the dock, at the beach or in your own backyard!
