How to Make Spicy Sweet Corn Waffles

Kick your weekend breakfast up a notch this fall with these Spicy Sweet Corn Waffles.

Waffles have always been one of my favorite breakfast meals. These Spicy Sweet Corn Waffles incorporate a little heat from blended chipotle peppers. The spice is then balanced with the sweet and creamy corn. They are great served with syrup for breakfast or could even be part of a hearty fall dinner when chili is served over them.

To get started, preheat a 6-inch Belgian waffle iron. In a blender add 3 chipotle peppers, adobo sauce and the milk. Blend until smooth.

In a large bowl, combine the Original Bisquick® mix, cream style corn, vegetable oil, egg and blended milk and peppers. Stir until combined.

Lightly spray the waffle iron with nonstick cooking spray and pour about 3/4 cup of the batter onto the iron.

Close the lid and cook until the steam stops coming from the sides and the waffle is golden brown. Continue until all of the batter has been used. Plate and serve with maple syrup or topping of your choice.
