How to Make a Dinner Salad that Satisfies

Do you love salads, but think they aren’t filling enough for dinnertime? Think again! These fabulous tips will help you create a delicious salad that eats like an evening meal.

It’s dinnertime. The troops are protesting, waiting impatiently for food to hit the table. What are you going to serve? These simple tips will take the terror out of making a meal-size, waist-friendly salad.

  1. Go Big on the Lettuce. Leafy green lettuce like romaine and Boston bibb aren’t just pretty; they are also good for you. Load up on these as a way to add bulk to the salad without adding too many calories.

  2. Get Veggie-fied. When it comes to veggies, there is no such thing as too much. Pile on all you want, from peppers to tomatoes and everything in between.

  3. Add a Protein. A protein will give the salad bulk. Add one portion (3 to 4 ounces) of steak, chicken or shrimp.

  4. Cheese, Please? A little cheese (about 1 ounce) can go a long way on a salad…and elevate the recipe from ordinary to extraordinary. Gorgonzola is a favorite of mine.

  5. To Crouton or Not to Crouton. Normally, I pass on calorie-laden croutons. But when it comes to a dinner salad, it's nice to toss in some good-quality ones. Or trade the croutons for slices of toasty bread on the side.
