Pack up the tent and cooler and head out camping! Here are two of my family favorites to enjoy around the campfire.
There is just something about cooking over the campfire. Granted, I never really appreciate the smoke smell in my hair for days afterward, but I really do love the tasty food that can be made. Pudgie Pies and S’mores Banana Boats are two campfire favorites that my family makes every year without fail.
Some people might call them pie-iron sandwiches or hobo pies, but in my family it is all about Pudgie Pies! These pizza sandwiches are delicious and easy to make. You can’t help but make more than one…or bribe someone else to do it.
Start with two pieces of white bread and your pie/sandwich iron. Butter one side of both bread slices.
Put one slice butter-side down on the iron.
Top with pizza sauce (the squeeze bottle works great!), pepperoni and a handful of shredded cheese.
Cover with the other piece of bread, butter-side up, and then put the other pie iron over it all.
Place iron in the coals, flipping a couple times and checking for toasting. It takes about 5-8 minutes.
After enjoying a savory and delicious Pudgie Pie, it is time to make a S’mores Banana Boat!
First, put a banana on a piece of foil and slice the banana down the middle, being careful not to slice all the way through.
Sprinkle with chocolate chips...
and then mini marshmallows.
Wrap the foil around the banana and put the packet in the coals. Use tongs to carefully take the packet back out of the coals.
After unwrapping, I usually add more chocolate, more marshmallows and crushed Golden Grahams® cereal for extra tastiness.
So even though the smoke gets in your eyes, you burn your fingers and your clothes have to be washed 5 or 6 times to get rid of the smoke smell, these delicious treats make campfire cooking worth it all!
