Ice cream is a year round treat in our house. I mean it’s the ultimate quick dessert. It comes in a million flavors and the topping possibilities are just as limitless. We love to make homemade ice cream and top it with a special sauce.

This quick and simple brandy berry caramel sauce comes together in less than 15 minutes. You start by making a caramel. Which couldn’t be easier, there is no stirring involved. You’ll just need to keep an eye on it so it doesn’t burn. I meant salted caramel yes, burnt caramel no. Then you’ll add the brandy and the berries. Smoosh them around so that the flavors marry together. A quick strain and then pour, as much or as little as you like over your ice cream of choice.

It’s also fantastic served over a pound cake, and you can absolutely use any berries you like.
