These days, the combo of chocolate and chipotle is found in both sweet and savory dishes. Adding a smoky heat to dishes, chipotle has popped up in truffles, mole sauces and brownies because they pair so well with the richness of chocolate. You don’t notice the heat at first—it slowly creeps up on you.
Seeing the popular trend of pairing chocolate and chipotle got me thinking. I decided to surprise my friends and give bacon-wrapped dates a twist.
When I brought these Bacon Chocolate Chipotle Dates to a party recently, I watched as one guy stood at the buffet table and consumed them one by one while carrying on a conversation. The pile dwindled in no time. The next morning, his wife called begging for the recipe. After all, everyone loves a sweet something wrapped in crisp bacon!
To make these sweet and savory snacks, stuff the dates with cream seasoned with chipotle powder. Then tuck in a sliver of rich dark chocolate.
Next, wrap the dates with a slice of bacon and place on a rack on top of a baking sheet. Bake for 15 to 20 minutes. The dates puff up, the chocolate melts and the bacon gets crisp.
Serve them warm and watch them disappear!
