Slow Cooker Crustless Mediterranean Quiche

Be the hostess with the mostest with this easy crustless quiche. Perfect for a no-fuss brunch!

No matter how much you like quiche, it can be a big pain to make. There's the pie crust to be pressed into place, the dredging of the cheese in flour, the hour long cooking and cooling process. If you’re hosting a brunch, who really wants to spend their time hassling with all that in the kitchen?

This recipe for crustless quiche can be mixed together in minutes, tossed in a slow cooker the morning of your brunch, then left to cook while you pull together all the final touches for your get-togther. The recipe cooks up beautifully, with golden brown edges and a tender, buttery texture. Add a platter of orange slices, a pitcher mimosas, a hot pot of coffee and a handful of napkins and you are on you are set!

Grab a box of Bisquick. It’s going to be your secret weapon for creating incredible flavor and texture.

Stop by your grocers olive bar and grab some roasted red peppers and sundried tomatoes. Chop them into bite-sized pieces.

Then grab some fresh spinach, eight eggs, a bit of chopped garlic and a few other basic ingredients. You'll want cheese too, of course! Stir together and toss it in your slow cooker. It's really that easy!

Cover the slow cooker and let it cook! In the meantime, enjoy making the final preparations for your brunch. Pop fresh flowers in a vase, set the table, spruce up the bathroom: Whatever you need to do, you'll have time to do it because the quiche will take care of itself!
