How to Make Devils on Horseback

It may not sound like your typical appetizer, but fans of the salty/sweet combination will love these little bites!

I have to be honest – I have no idea where the name for these appetizers came from. But I do know that I love the salty/sweet combination, so I knew before I even tried these that I would absolutely love them!! 

Devils on Horseback are basically an appetizer made up of a date or prune that is stuffed and then wrapped in bacon then cooked. Whole dates are hard for me to find in my small town, so I went with prunes. I loved the sound of a delicious blue cheese filling paired with the prune and the bacon. There are only 3 ingredients in this recipe, but the flavor is off the charts!! 

Start with prunes, blue cheese and bacon that has been cut into thirds. You will also need toothpicks to hold everything together.

Soak the toothpicks in water for 10-15 minutes.

Take a sharp paring knife and cut a slit in the prune. You want to make a pocket, but don’t cut all of the way through.

Stuff the pocket with blue cheese.

Take a piece of the bacon and wrap it around the prune, securing everything with a toothpick.

Place a cooling rack over the top of a baking sheet and place the wrapped prunes on the cooling rack.

Place under the broiler and cook until the bacon is crisp, turning once. Let them cool a few minutes before serving.
