Refrigerator Cookies How-To

Also called icebox cookies, these crisp cookies are a snap to make. The dough can be frozen; so fresh cookies can be baked at any time. Freeze the tightly wrapped cookie dough for up to two months, then slice and bake when you want. Just add 1 or 2 minutes to the baking time when the dough comes straight from the freezer.

Step 1: Beat cookie mixture with electric mixer or with spoon; stir in nuts if using. Step 2: Shape dough on plastic wrap to 10x3-inch rectangle. Step 3: Wrap; refrigerate about 2 hours or until firm. Step 4: Unwrap; cut rectangle into 1/8-inch slices.
