How to Make Pink Peppermint Whoopie Pies

Try your hand at these delicate, cake-like sandwiches filled with marshmallow crème and sprinkled with crushed-up peppermints; they make the perfect Valentine’s Day dessert.

What you’ll need:

  • Ingredients for Pink Peppermint Whoopie Pies
  • Cookie sheets 
  • Cooking spray
  • Parchment paper
  • Large bowl
  • Electric mixer or large spoon
  • Cooling racks 

How to: 

1. Heat oven to 400° F. Grease cookie sheets with shortening or cooking spray. In large bowl, beat granulated sugar, ½ cup butter, the buttermilk, vanilla, egg and chocolate with electric mixer on medium speed, or mix with spoon, until well blended. Stir in flour, baking soda and salt. On cookie sheets, drop dough by rounded tablespoonfuls about 2 inches apart.

2. Bake 8 to 10 minutes or until almost no indentation remains when touched in center. Immediately remove from cookie sheets to cooling racks. Cool completely, about 30 minutes.

3. In large bowl, beat all filling ingredients on medium speed about 2 minutes or until light and fluffy. Place flat sides of 2 cookies together with 3 tablespoons of filling, sandwich style, sprinkling edges of filling with crushed peppermint candies, if desired. Store in tightly covered container.
