DIY Gift from the Kitchen: Gingerbread Cheesecake Cookie Stacks

A festive holiday cookie that will be a tasty and pretty homemade gift from your kitchen.


There is always a question looming in everyone’s mind during the holidays, “What can I give as a gift?” Whether it is your neighbor, a co-worker or host at one of the countless parties on your calendar, you never quite know what to give. I believe that there’s no better gift than one handmade in your kitchen. And Betty Crocker has so many ideas for homemade gifts to show you care this holiday season. I decided to create a cookie stack that not only looks pretty, but tastes delicious and is easy to put together.

The shortcut for this recipe is using a pouch of Betty Crocker Gingerbread cookie mix for the stars. Once the dough is mixed, roll it out on your work surface. Using medium and small star-shaped cutters, cut out 24 medium stars and eight small stars.

Next, make the filling. (It’s my favorite part!) I tweaked my favorite refrigerator cheesecake filling to spread between the cookie layers. I made the filling the night before so it had time to set a bit and spooned it on right before I served the cookies. If you are going to deliver these as gifts, I’d recommend assembling them and then put ‘em the freezer for a bit for a good set.

No matter who you deliver these to this season, they are sure to feel lucky because you spent the time to make something special, and delicious, just for them.
