When my neighbor presented me with a new 5-Minute Microwave Brownie Pan with its nifty snap-on top, I thought it might be just the thing for toting casserole dinners to potlucks. I wasn’t sure I trusted that it could also microwave brownies in five minutes. “Trust me,” she said. “Remember those double-chocolate turtle bars I brought to the picnic? Here’s the pan that makes it all possible.” Still. Brownies in a microwave? But when my son called to say he needed a snack for his homeroom, I was out of time and ideas and figured, “Why not?” Out came the box, the pan, egg and oil, and within minutes, literally, the house was filled with that fabulous, distinct dark-chocolate brownie smell.
The brownies baked up in absolutely no time, and while they were still hot, I scattered dark chocolate baking chips (half of a bag) over them and let them melt in -- and viola! Brownies for the homeroom with one left over for me.
Now that I know how super easy microwave brownies can be, the sky is the absolute limit! I can play with my favorite variations, like scattering peanut butter chips or a mix of white and milk chocolate to make a pretty swirl. Or, once they’ve cooled, heap on lots of my favorite fluffy white icing. Or how about brownies with fresh raspberries topped with whipped cream for an upscale dessert?
No matter how rushed or crazy things get, the luscious home scent of brownies baking and the promise of warm brownies are within five minutes' reach.
