Cookie bars are a fun way to change things up with minimal effort. It’s a little trick I like to use when I’m feeling lazy or need to save time. And if that’s not enough, Betty Crocker cookie mixes make it even easier to satisfy your cookie cravings.

I thought it would be fun to combine two of Betty Crocker’s most popular cookie mixes—double chocolate chunk and peanut butter—into one irresistible bar. It’s like a brownie and a cookie all in one, and quite honestly, I found it a challenge to not eat the whole pan. Here’s how to make ‘em! 

Following the recipe on the back of the chocolate cookie mix, blend the contents of the pouch with oil and water until a soft dough forms. Press half of the chocolate dough into an 8-inch square pan that has been greased or lined with parchment paper. Then prepare the peanut butter cookie mix, again following the instructions on the back of the package. Don’t worry if it’s slightly crumbly!

Use a cookie scoop or spoon to drop rounded tablespoons of the peanut butter dough evenly over the chocolate batter. Use another spoon to drop the remaining chocolate dough in the spaces around the peanut butter dough. If it’s a little mess-looking, don’t fret—it’ll all smooth out in the oven.

Bake at 350 for about 30 minutes.

Let cool completely, then slice into bars and serve. If you want to dress up your cookie bars even more, give them a simple dusting of powdered sugar. See what I mean by easy?
