One of the best things about summer is the abundance of fresh fruit, which I never tire of baking into cakes, pies and cobblers. But sometimes, I don’t have the time or the energy for an elaborate dessert. These single-serving mug cobblers have everything you love in a fresh fruit cobbler, but without all the fuss.

It starts, of course, with fresh fruit. Use strawberries, peaches, blueberries, or whatever fruit you like. You can also use a combination of fruit! Fill your mug with the fruit and add a little sugar. If your fruit is really sweet already, or if you just prefer to leave out the added sugar, go ahead.

Next, in a small bowl, mix your cobbler topping. The base for the topping is simple: Bisquick, sugar and milk. But there are many optional ingredients you can add to boost the flavor of your mug cobbler, like cinnamon, lemon zest and toasted nuts. Get creative and use what you have on hand! The combinations I enjoy most are blueberries with lemon zest and cinnamon, strawberries and orange zest and peaches with toasted almonds. Once you’ve assembled your topping, crumble it on top of the fruit.

Pop your mug in the microwave and cook it for about 1 1/2 minutes. Every microwave is different, so you’re going to want to watch to make sure it doesn’t bubble over too much.
