Any-Berry Cobbler…the Easiest Dessert Ever!
Cobbler makes a luscious fresh dessert that's ready in no time. All you need is a box of Bisquick® mix, a little fruit and some imagination.
Short of picking up a pie from your favorite bakery, you won’t find an easier dessert than fresh fruit cobbler. It’s the go-to family treat at our cottage on Madeline Island on the shores of Lake Superior. Thanks to Bisquick mix, fruit cobbler is about as easy as a summer breeze. We dig in for snacks when we’re back from the beach. After dinner, we warm it up and top servings with vanilla ice cream, making it just the thing for playing cards on the porch.
Truth be told, cobbler also doubles as our breakfast. (Who doesn’t want to start the day with dessert?) Easier than pancakes or waffles, cobbler comes to the table fragrant and bubbly and complements sizzling sausages or bacon and eggs.
The basic recipe works beautifully with freshly picked blueberries and raspberries from bushes that arch over the dirt road heading to the beach on the island's north shore. But the cobbler is just as good in the fall with apples and pears, in winter with dried apricots and cranberries (that have been plumped in apple juice) and in the spring with fresh strawberries.
Frozen peaches, mangos and berries also work well any time of the year. Use your imagination and don’t hesitate to vary the flavors. Berries are sparked with tangy lemon juice and a little lemon zest. In the fall, cinnamon and dried ginger are perfect partners for apples. Come summer, toss chopped almonds into the crust for extra crunch and a pinch of nutmeg for flavor. Once you’ve whipped up a cobbler or two, you’ll know the recipe by heart. Bake one up tonight and taste how easy homemade can be.
