Apple Crisp Cookie Pizza

The ultimate dessert hybrid, this sweet treat combines the ease of fruit pizza with the homey goodness of apple crisp. Try it tonight!

Apple desserts are the ultimate comforting fall treat. As much as I love summer, I always get a little excited when the weather turns a little cooler and apples start popping up at the farmers market. I’m especially fond of pies and crisps, and now, this fun Apple Crisp Cookie Pizza. It’s two of my favorite desserts in one! The bottom is an oatmeal cookie crust, and the top is spiced apples covered with a crisp nut and oat topping.

Using Betty Crocker Oatmeal Cookie Mix gives you a head start with this recipe, making what could be a complicated dessert actually quite simple. In addition to the mix, you’ll also need butter, an egg, apples, sugar, cinnamon, nuts and oats.

First, take out 1/3 cup of the oatmeal cookie mix. Set that aside, you’ll use it later for the crisp topping. Beat the rest of the mix with the butter, egg and water.

Then press it into the pie pan so that it completely covers the bottom. Bake it for 5-6 minutes, just until the edges begin to turn brown. The crust will not be fully baked.

Next, make the crisp topping by combining the reserved cookie mix, oats, nuts and butter.

Then toss the sliced apples with lemon juice, sugar and cinnamon.

Spread the apple filling on top of the par-baked cookie crust and then top with the crisp mixture.

Bake until topping is golden and apples are softened, about 10-12 minutes. Top with a simple vanilla icing, or for a really decadent dessert, serve with whipped cream or vanilla ice cream.
