Sweet Potato Sheet Cake

A show-stopping Thanksgiving dessert doesn’t have to be complicated. This sheet cake is easy and will have your guests coming back for more.

Growing up, I didn’t like sweet potatoes. I just didn’t get why they were a thing. Potatoes aren’t supposed to be sweet, right? Fast forward many years and I finally gave sweet potatoes a fair chance. And guess what? I absolutely adored them. 

I tried my first sweet potato cake a few years ago and totally fell in love. This version starts with a Betty Crocker® cake mix, and is finished off with a delicious orange cream cheese frosting. 

You will need a box Betty Crocker yellow cake mix, eggs, milk, orange, vegetable oil, cooked and mashed sweet potatoes, pumpkin pie spice, cream cheese, butter, powdered sugar and orange extract.

Start off by combining all of the cake ingredients together.

When it’s all ready to go, pour batter into a sheet pan that has been sprayed with cooking spray. Bake until a toothpick inserted in the center comes out clean. Let the cake cool completely.

When the cake is cool, mix together all of the frosting ingredients until light and fluffy.

Spread on top of the cake, cut into squares and enjoy!
