If there’s anything I’ve learned over the years when it comes to special occasions, it’s that stressing out over the meal is a real mood killer—and completely unnecessary. Whether it’s a birthday, anniversary or Valentine’s Day, the last thing you want to be doing is spending time in the kitchen instead of with your sweetie.

I’ve had to learn the hard way. There was the time we ordered Thai takeout for our anniversary because the gnudi disintegrated or the time the cheesy pasta for my husband’s birthday turned to mush and, as a result, I did, too. This year, I’m keeping our Valentine’s Day dinner sweet and simple. And these devil’s food cupcakes are a wonderful way to cap off a romantic meal.

What I love most about these cupcakes—besides their rich chocolate flavor—is how easy they are to make. You can literally mix the batter, “bake” them and eat them in less than 15 minutes, which is fabulous if you want to enjoy a long, leisurely dinner.
