Chocolate-Strawberry Icebox Cake

Cool and refreshing, this simple dessert is a breeze to make because no baking is required. It is sure to become your go-to cake for any spring and summer occasion!

When strawberries are in season, there is no better way to showcase them than in this Chocolate-Strawberry Icebox Cake. Layers of strawberry-flavored whipped cream, chocolate graham crackers and mini chocolate chips make for just about the easiest dessert you can think of. The best part? You don’t even have to turn on your oven! 

Start by hulling and slicing one pound of fresh strawberries. Sprinkle with powdered sugar and let stand for 10 minutes

Crush the berries with a potato masher. Set aside.

Whip the heavy cream using an electric mixer. Transfer to another bowl. Add mascarpone cheese, powdered sugar, and vanilla. Beat until smooth. Fold the whipped cream into this mixture.

Gently fold in the reserved strawberries.

Line a 9x13 pan with chocolate graham crackers. Spread 1/3 of the strawberry mixture over the crackers and smooth. Sprinkle with 1/3 of the chocolate chips.

Repeat until you have 3 layers. Chill for 2 hours before slicing.
