Cereal Milk Banana Cream Pie

What do you get when you combine a cinnamon-y sweet breakfast cereal and a classic creamy dessert? This pie, that’s what!

Though I was rarely allowed to have it as a child, Cinnamon Toast Crunch topped my list of most-coveted cereals. It had all the things I loved about cinnamon toast—crunchy sugar and spicy cinnamon—but in a bowl. Drench it with some icy milk and holy smokes, is there anything better? 

This creamy pie is a nod to my love for Cinnamon Toast Crunch, combined with a favorite dessert, banana cream pie. Since I’ve always loved sliced bananas with my cereal, it made sense to combine the flavors of Cinnamon Toast Crunch with creamy cereal-milk infused pudding. 

Get started by pulsing your Cinnamon Toast Crunch with melted butter and a bit of salt in the food processor.

Next, press it into your pan. A flat-bottomed glass makes this easy work!

Then, it’s pudding time. First, we steep your cereal with warm cream and milk. Then wait for the flavors to meld.

Gather the remaining ingredients and make the pudding.

Finally, blend in your butter.

Assembling this baby is easy: crust, bananas, pudding…done!

Once you’re done layering, stash your nearly-done pie in the fridge for a couple of hours to set.

When you’re ready to slice-and-serve, whip up some fresh whipped cream. Do it by hand and feel like a champ (or be smarter than me and use a hand mixer). Spread on top of chilled pie.
