Apricot-Cranberry Granola Bars

Granola bars are a simple and convenient way to pack a handful of nutrients into one bar for a busy-morning breakfast.

You’ve got five minutes left before you need to head out the door. The kitchen sink is filled with last night’s dishes, the dog needs to be fed and the kids haven’t brushed their teeth yet. You rush out the door and drive away, only to realize that you never had breakfast. Sound familiar?

Many of us can relate in some way to this scenario. Unfortunately, skipping breakfast can lead to a long day of feeling like your shoes are on the wrong feet. But the good news is you don’t have to get up before the rooster crows to have a flavorful, healthy and filling breakfast. There’s a way to get in that most important meal of the day, even when you only have five minutes to spare.

Apricot-Cranberry Granola Bars are one of my favorite grab-and-go-breakfasts. In just a few hours on a weekend, I can bake these nutrient-rich bars, freeze them and take one on my way out the door during the week. They’re filled with dried fruit, crunchy nuts, sweet granola and the fabulous flavors of honey and molasses, so you don’t have to sacrifice taste to get your morning meal. Kids love the chewy texture and sweetness, too.

I like to stock my freezer with these bars so they stay fresh longer and so that I have a backup stash for busy mornings.
