Cook directly under a red-hot heating unit.

Tips
The distance from the heat to the food is important. Food too close to the heat will burn. Betty’s broiling recipes provide the recommended distance between the food and the broiling element. Check this distance, allowing space for the broiler pan with the food, before heating the broiler so you can reposition the oven rack if necessary.Some foods, such as steaks, need to be turned during broiling for the most even cooking.
