  Pecans

Pecans, a native North American nut, are often associated with the South and its cuisine. The nut's smooth, tan shell is about 1 inch long. The nut has a rich, buttery flavor that matches its fat content, over 70 percent. Pecans can be purchased unshelled whole, in halves or chopped.

How to Buy

Choose unshelled pecans that have unblemished, uncracked shells. The nut should not rattle in the shell.

How to Store

Store tightly wrapped in a cool, dry place up to 6 months. Refrigerate shelled pecans in an airtight container up to 3 months or freeze up to 6 months. Store pecans carefully; their high fat content can cause them to become rancid quickly.
