  Pea Pods, Snow (Chinese)

This legume is a bright green pod, both thin and crisp. You can eat the whole pod (after pinching off the ends just before using); the tiny seeds inside are sweet and tender. An essential for Chinese cooking, snow pea pods are available both fresh and frozen.

How to Buy

Choose flat, crisp and evenly green pods with a velvety feel.

How to Prepare

Wash pods; remove tips and strings.

How to Cook Conventionally

Boil: Uncovered 2 to 3 minutes, stirring occasionally, until crisp-tender.

Steam: Covered 3 to 5 minutes or until crisp-tender.

How to Microwave

Place in 1-quart microwavable casserole with just the water that clings to the pea pods. Cover. Microwave 6 to 7 minutes, stirring once, until crisp-tender. Let stand 2 minutes.
