  Mushrooms, Shiitake

Shiitake mushrooms have a meaty flesh with a steaklike flavor. Caps are dark brown, sometimes with tan stripes. The average size is 3 to 6 inches in diameter, but they can be 8 to 10 inches. The stems are quite tough.

How to Buy

Look for plump mushrooms with curled edges. Avoid those that are broken or shriveled.
