Beans, Long
Long beans, also called Chinese long beans, look like a cousin to garden green beans, but they actually are part of the black-eyed pea family. These long, slender beans can measure from 10 to 20 inches long. They are thin and flexible with a pale to dark green hue. Cut long beans before cooking them. When cooked, they become chewy and firm and have a distinct bean-like flavor.
How to Use
Best stir-fried or used in soups and stews. They can also be steamed, boiled and microwaved; to retain their texture, don't overcook them.
How to Buy
Look for long beans in supermarkets, Asian markets or food co-ops.
How to Store
Store up to 4 days in the refrigerator.
