Beans, Lima
These plump, pale green beans with a slight kidney-shaped curve come in two varieties: Fordhook and baby limas. Fordhooks are larger, plumper and fuller flavored than baby limas. Having a choice of sizes makes them a wonderful addition to multibean salads, soups and casseroles. (Also see Butter Beans.)
How to Buy
Choose broad, thick, shiny pods that are plump with large seeds.
How to Prepare
Wash beans. Shell just before cooking. To shell beans, remove thin outer edge of pod with sharp knife or scissors. Slip out beans.
How to Cook Conventionally
Boil: uncovered 5 minutes. Cover and boil 15 to 20 minutes longer or until tender.
How to Microwave
Place in 1-quart microwavable casserole; add 1 cup of water. Cover. Microwave on High 4 to 5 minutes or until boiling. Microwave on Medium-Low (30%) 20 to 25 minutes or until tender. Let stand 5 minutes; drain.
