  Beans, Green, Purple Wax and Yellow Wax

These long, skinny pods are one of the oldest foods known. They are available fresh year-round and also come canned, frozen and freeze-dried. They can be boiled, steamed, stir-fried and microwaved. Through the surprising “magic” of cooking, purple wax beans will turn dark green!

How to Buy

Choose bright, smooth, crisp pods. Just-picked beans will feel pliable and velvety. When cooked, purple wax beans will turn dark green. 

How to Prepare

Wash beans; remove ends. Leave beans whole, or cut into 1-inch pieces.

How to Cook Conventionally

Boil: Uncovered 6 to 8 minutes or until crisp-tender.

Steam: Covered 10 to 12 minutes or until crisp-tender.

How to Microwave

Place pieces in 1-quart microwavable casserole; add 1 cup water. Cover. Microwave 10 to 12 minutes or until crisp-tender. Let stand 5 minutes; drain.
