  Baking Powder

Leavening mixture made from baking soda, an acid and a moisture absorber. Double-acting baking powder forms carbon dioxide--the gas that makes doughs rise--twice: once when mixed with moist ingredients and once during baking. Do not substitute baking powder for baking soda in recipes.
