Annatto Seed
Rust-colored seed from the tropical annatto tree. The seed is sometimes ground and added to foods to give a bright, yellow color. Or it may be cooked in fat, then discarded once the color has been transferred. Annatto seed is sometimes used in Caribbean and southwestern cooking.
