Rolling Pin The best piece of equipment for rolling out cookie dough and pastry. Most often made from hardwood, this tube-shaped tool is also available in other materials such as plastic, glass, ceramic and marble.

HOW TO BUY
If you plan to use a rolling pin often, look for one that's balanced, heavy and over 12 inches long. The American or Bakers' rolling pin has handles; the straight French rolling pin doesn't have handles. Pins with handles should roll smoothly.
