That is a great question. Many of the kitchen tested recipes that use our Gluten Free Rice Flour blend do call for xanthum gum. Some do not. We recommend adding the xanthum gum where specified. I know this is an expensive ingredient, but it will make a world of difference with your texture and performance. Thank you for reaching out!
