Need recipes for large amounts for a large family.

 

My son has 8 children and I need recipes to cook when they come.  I do good but need some new recipes to make things different each time.  If you can help me, please do so.  Thanks to all........bluebunting

I don't know if these are little children or older.  The serving sizes on these recipes are for adult portions, so if it says, "serves 4-6," or "Serves 8," just know that if they are yonger children and/or aren't big eaters, the dishes will go farther.

 These are three recipes that came to mind and I know children like.  If I think of others, I will let you know.  When will you be cooking meals for the little darlings?  Enjoy them.  Don't make complicated meals that will keep you in the kitchen a long time and/or get you stressed.  AtlantaPatBig Smile

 "More" Casserole (this will be more than a plenty -and you will have some left over)

1 lb. ground beef

1 cup chopped onions

1 pkg. (8 oz) egg noodles, cooked

1 pkg. (10 oz) frozen peas, thawed

1 can (12 oz) whole-kernal corn, drained (I use frozen corn a lot of times)

1 can (8 oz) mushroom pieces, drained (You can use 1/2 that much -if they don't like mushrooms, leave them out)

1 can (8-1/4 oz) water chestnuts, drained and diced

1 can (10-3/4 oz) condensed Cream of Celery soup, undiluted

1-1/2 cups milk

1 tablespoon chili powder

1 tablespoon Worcestershire sauce

2 teaspoons salt

1/4 teaspoon garlic powder

1 lb. (4 cups) sharp cheddar cheese, shredded

Preheat oven to 350 degrees.  In large skillet, over medium heat, cook ground beef and onions until meat is browned and onions are tender.  Spoon off drippings; discard.  Spoon into 4 quart casserole.  Add next 5 ingredients and toss well.  Set aside. In medium saucepan, heat soup and remaining ingredients, except cheese, until bubbly, stirring occasionally.  Stir in 3 cups cheese and heat (reserve 1 cup for top) stirring with wire whisk until cheese is melted.  Pour over meat-vegetable mixture and stir until well-mixed.  (May be prepared in advance to this point and frozen.)  Cover with foil and bake about 40 minutes, or until bubbly.  Remove foil and sprinkle with remaining cheese.  Continue cooking 5 more minutes or until cheese melts.  Makes 8-10 large servings. 

To Freeze: Stir in all cheese; spoon into two 12x8 inch freezer-to-oven dishes.  Cover with foil and freeze up to 1 month.  To serve, place frozen in 350 degree oven and bake, covered for 1-1/2 hours until hot and bubbly.

 

 

Mile High Chicken Enchiladas

(4 main dish servings or 8 appetizer servings)

2 cups shredded, cooked chicken 

1 (10-3/4 oz) can condensed cream of chicken soup, or fat free cream of chicken soup

1 (4/5 oz) can chopped chiles, well drained.

1 teaspoon chili powder

6 (6-inch) flour tortillas

1 (8 oz) package shredded Mexican cheese blend, divided

Stir together first 4 ingredients in a small saucepan, and cook over medium heat, until thoroughly heated.

Place 1 tortilla in a 9-inch pie plate.  Spread with 1/2 cup chicken mixture, and sprinkle with 3 tablespoons cheese.  Repeat layers of tortilla, chicken mixture, and cheese, ending with tortilla.  Cover with foil.

Bake at 425 degrees for 15 to 20 minutes or until thoroughly heated.  Uncover and sprinkle with remaining shredded cheese; bake 5 more minutes.  Cut in wedges.

Corned Beef Cabbage Casserole (Will serve 6-8)

1 lb. cabbage

6 large potatoes

1 lb carrots

1 large onion

1 large can Corned Beef

1 can Crean of Mushroom Soup

1 (8 oz) package shredded sharp cheddar cheese

1. Skin the potatoes and cut in chunks.  Place in bottom of casserole dish.

2. Clean and skin carrots.  Cut them into chunks.  Add to potatoes in the bottom of the casserold dish.

3. Cut onion into slices.  Place half the onion in with potatoes and carrots.  Save remaining onion.

4. Shred the cabbage and place on top of ingredients in casserole dish.  Set Corned Beef on top of cabbage, making sure to cover the entire cabbage.  Spoon the Cream of Mushroom soup (not mixed) over conred beef top.  Top with remaining onion.

 5. Cover dish.  Place in preheated 375 degree oven.  Cook until potatoes, carrots and cabbage are tender, about 60 minutes (depending on how big you cut the potatoes and carrots).

6. Remove dish from oven, remove the cover and sprinkle cheese on top.  Return the dish to the oven, uncovered, just until the cheese is browned.

Serve with steaming hot Bisquick Biscuits (You can find a recipe on at Bisquick.com, or I can give you a recipe.).

I have not received them yet. Where do I need to look to get them? I am looking forward to getting them.  They will be of great help to me when I have them all.  Thanks for sharing if I do get them.Sad

The Board Monitors are reviewing it.  Sometimes when you post a recipe(s) there is a word or something that flags it for review.  None of us can figure out what it is.  Jessica, one of the Monitors, said that they review any recipe that is flagged once a week.  The same thing happened when I posted Sesame Chicken. 

The long answer to your question, "Where can you go looking for them"  -is until the post is released they won't be printed.  Just check back, I don't know what day of the week they do the reviews, but if not this weekend, perhaps on Monday or Tuesday.  I made one of the recipes tonight. When will your son and the children be coming? AtlantaPatHmm

These kids have been trained to eat healthy foods but will eat almost anything. They love to eat and will eat most foods.  It is the amount I need to get use too.  Yes, we are blessed and love to spoil each one.  As Birthdays come, we take them out shopping and out to eat on their special day.  We make them feel special.  They love it........

This is great served with rice, mashed potatoes or noodles. Sometimes I add a jar of sliced mushrooms.  You can use a boneless chuck roast or pork chops instead of cubed steak.
Crockpot Cubed Steak for a Crowd

1 large pkg cubed steaks
2 large cans cream of mushroom soup
1 pkg Liption onion soup mix
2 pkgs brown gravy mix

Cut steaks into serving size pieces then season with pepper. Combine soup and dry mixes. Put a single layer of meat in crockpot then cover with a layer of soup mixture. Continue layering meat and soup. Cover and cook on low for 6 to 8 hours.

 

A spiral sliced baked ham would be great. You could serve it one night with vegetables then make sandwiches with the leftovers the next day for lunch. I buy fully cooked, ready to eat hams. Heating instructions are on the back of the label, usually 325 degrees, 15 minutes per lb.  I always freeze the bone and add it to soup or a pot of beans for great flavor.

 

I love pulled pork BBQ sandwiches. So easy to make, too. I rub just a little Liquid Smoke all over a pork roast, pork loin, boston butt, etc. then season with salt, pepper and garlic powder. If the roast is really big, I cut it in half so it will fit in the crockpot better and cook more evenly. I add a little BBQ sauce on top then cover and cook on low for about 7- 8 hours. I remove the meat to a platter and when it is cool enough, remove any fat, shred the meat and add BBQ sauce to the meat. I usually discard the liquid from the crockpot, but you can skim the fat and moisten the meat with it.
