Boston Cream Cookie Cups



“Being a housewife to a wonderful husband and three children (boys, ages 6, 8 & 17) is a very demanding job. I love recipes that are quick and easy to make, especially ones started from a mix and look like they were made from scratch. My recipe came about when I ran across a photo of a Boston Cream Pie and I wondered how to simplify it into a family-friendly recipe. I made my Boston Cream Cookie Cups in muffin tins so it would be easier for my children to handle. Plus their individual serving size is great for on the go, snack time and packed lunches. After whipping up a batch of these treats I put them in the refrigerator until later on. Little did I know my little taste testers began sampling my dessert. They were even sneaking a few here and there for their friends to try. Before I knew it they were all gone! I had to make a second batch to share with family and our friends. They couldn’t believe how tasty this little treat was and how simple it was to make. They would have never guessed it all started with a Betty Crocker cookie mix if I hadn’t told them.”
