old school apple dumplings

last summer i gave away some of my old cokbooks.  The recipe for apple dumplings was in it.  I don't care for the newer recipes that have cream or sour cream in them.  looking for this, and also lady fingers.

 Apple Dumplings
 

2 cups Gold Medal® all-purpose or whole wheat flour*
1 teaspoon salt
2/3 cup plus 2 tablespoons shortening
4 to 5 tablespoons cold water
6 baking apples (about 3 inches in diameter), pared and cored
3 tablespoons raisins
3 tablespoons chopped nuts
2 1/2 cups packed brown sugar
1 1/3 cups water
Sweetened whipped cream
 
Heat oven to 425°.  Measure flour and salt into mixing bowl.  Cut in shortening thoroughly.  Sprinkle with water, 1 tablespoon at a time, mixing well with fork until all flour is moistened.  Gather dough together; press into ball.  On lightly floured board, roll 2/3 of dough into a 14-inch square; cut into 4 squares.  Roll remaining dough into a rectangle 14x7 inches; cut into 2 squares.  Place an apple on each square.  Stir together raisins and nuts; fill center of each apple. Moisten corners of square; bring 2 opposite corners of pastry up over apple and press corners together.  Fold in sides of remaining corners; bring corners up over apple and press together.  Place dumplings in baking dish, 13x9x2 inches.  
 
Heat sugar and water to boiling; carefully pour around dumplings.  Bake about 40 minutes until crust is browned and apple is tender when pricked with a fork.  Spoon syrup over apples 2 or 3 times during baking.  Serve warm or cold with whipped cream.  6 servings.
 
*When using Self-Rising Flour, omit salt.

Company-best Apple Dumplings:
Follow recipe for Apple Dumplings (above) except--substitute 6 tablespoons chopped dried apricots for the raisins and chopped nuts.

Peach Dumplings:
 Follow recipe for Apple Dumplings (above)
except--substitute 6 peaches, peeled, halved and pitted, for the apples and 1/4 cup cranberry relish for the raisins and chopped nuts.
 

High Altitude Directions (3500 to 6500 feet):
 For all-purpose, self-rising, unbleached and whole wheat flours, increase bake time to about 55 minutes.

ghutzell, I don't have the recipe that your looking for, but here's how I make mine. How many i want to make depends on the amount. I use aweet-tart apples that will hold there shape, I perfer Winesap. I mix 1/2 c. each white sugar and brown and 1t. cinnamon. IAfter peeling & coring the apples I put them on a piece of pie dough, put the sugar/cinnamon mixture in the middle, where the core was untill it's full, then put a slice of butter on top, wrap the dough around the apple, sit them next to each other in a baking dish and bake at 350 for 45-60 minutes, untill the crust is brown.
